Cashew Lime Green Smoothie

The Cashew Lime Green Smoothie is rich in fiber because of spinach, fresh herbs, dates, and mango. It’s light and refreshing but filling enough to keep you satisfied. This smoothie’s star ingredient is grounded cashews, which gives it a creamy texture without the dairy.

Why are Cashews Good for Your Body?

Cashews are high in fiber, heart-healthy fats, and plant protein and are low in sugar. They’re also a good source of copper, magnesium, and manganese, which are essential nutrients that produce energy, strengthen immunity, and improve brain and bone health. 

Cashews’ unsaturated fat and fiber help to slow digestion when added to any meal. When digestion is delayed, blood sugar levels remain stable, reducing the risk of significant spikes or drops.

What if I have a Cashew Allergy?

If you’re allergic to cashews, don’t worry! You can use nuts such as brazil nuts, macadamia nuts, almonds, or hemp seeds. The texture and taste will be different, but it will still be full of healthy fats, protein, and a bit of fiber. Add some extra dates or honey for more sweetness because cashews have a natural sweetness that almonds and macadamia nuts don’t.

How to Make Cashew Lime Green Smoothie?

Ingredients:

3 cups of organic spinach

1/2 fresh mango or frozen

1/2 cup coconut milk

1/2 cup water

1/3 cup raw cashews

1/2 inch of fresh ginger, peeled (optional)

1 tablespoon fresh cilantro

1 tablespoon fresh mint

1 Medjool date, pitted

1 teaspoon organic powdered, wheatgrass (optional)

1 teaspoon honey (optional)

Juice of 2 limes

Pinch of sea salt

Directions:

  1. Simply pour and combine all the ingredients in a high-speed blender and blend until smooth! You can also use frozen mango instead of fresh to help the smoothie cool down faster. This also adds a bit of thickness to the texture! 
  2.  Add ice to chill to your desired temperature. Serve and drink it right away.
